Nokdu Juk

Ingredients
- Mung beans - 100 grams
- Water - 1 liter
- Garlic - 3 cloves, minced
- Ginger - 1 teaspoon, minced
- Green onions - 2 stalks, chopped
- Soy sauce - 2 tablespoons
- Salt - to taste
- Sesame oil - 1 tablespoon
- Eggs - 2, lightly beaten
- Black pepper - to taste
Steps
- Rinse the mung beans under cold water until the water runs clear, then soak them in water for at least 2 hours or overnight.
- Drain the soaked mung beans and place them in a pot with 1 liter of fresh water. Bring to a boil over medium heat.
- Once boiling, reduce the heat to low, cover the pot, and simmer for about 20 minutes, or until the mung beans are soft and begin to break down.
- Add minced garlic, ginger, and chopped green onions to the pot. Stir and let it cook for an additional 5 minutes.
- Stir in the soy sauce, sesame oil, and salt to taste. You may add more water if you prefer a thinner consistency.
- Slowly pour in the beaten eggs while stirring the soup to create ribbons of egg throughout.
- Season with black pepper and additional green onions for garnish. Cook for another 2-3 minutes.
- Serve hot, garnished with extra green onions, if desired.
