Ingredients

  • Mung beans - 100 grams
  • Water - 1 liter
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Green onions - 2 stalks, chopped
  • Soy sauce - 2 tablespoons
  • Salt - to taste
  • Sesame oil - 1 tablespoon
  • Eggs - 2, lightly beaten
  • Black pepper - to taste

Steps

  1. Rinse the mung beans under cold water until the water runs clear, then soak them in water for at least 2 hours or overnight.
  2. Drain the soaked mung beans and place them in a pot with 1 liter of fresh water. Bring to a boil over medium heat.
  3. Once boiling, reduce the heat to low, cover the pot, and simmer for about 20 minutes, or until the mung beans are soft and begin to break down.
  4. Add minced garlic, ginger, and chopped green onions to the pot. Stir and let it cook for an additional 5 minutes.
  5. Stir in the soy sauce, sesame oil, and salt to taste. You may add more water if you prefer a thinner consistency.
  6. Slowly pour in the beaten eggs while stirring the soup to create ribbons of egg throughout.
  7. Season with black pepper and additional green onions for garnish. Cook for another 2-3 minutes.
  8. Serve hot, garnished with extra green onions, if desired.
