Ingredients

  • Mung beans - 150 grams
  • Water - 300 ml
  • Salt - 1 teaspoon
  • Garlic - 2 cloves, minced
  • Scallions - 2, finely chopped
  • Carrot - 1 small, grated
  • Zucchini - 1 small, grated
  • Vegetable oil - 2 tablespoons
  • Black pepper - 1/2 teaspoon
  • Sesame oil - 1 teaspoon

Steps

  1. Soak the mung beans in water for at least 4 hours or overnight.
  2. Drain the beans and blend them with 300 ml of fresh water until smooth.
  3. In a mixing bowl, combine the mung bean puree with salt, minced garlic, scallions, grated carrot, grated zucchini, and black pepper; mix well.
  4. Heat a non-stick skillet over medium heat and add 1 tablespoon of vegetable oil.
  5. Pour half of the batter into the skillet, spreading it evenly to form a pancake.
  6. Cook for about 3-4 minutes on one side until golden brown, then flip and cook for another 3-4 minutes until cooked through.
  7. Repeat with the remaining batter, adding more oil as needed.
  8. Drizzle sesame oil on top before serving.
