Ingredients
- Mung beans - 150 grams
- Water - 300 ml
- Salt - 1 teaspoon
- Garlic - 2 cloves, minced
- Scallions - 2, finely chopped
- Carrot - 1 small, grated
- Zucchini - 1 small, grated
- Vegetable oil - 2 tablespoons
- Black pepper - 1/2 teaspoon
- Sesame oil - 1 teaspoon
Steps
- Soak the mung beans in water for at least 4 hours or overnight.
- Drain the beans and blend them with 300 ml of fresh water until smooth.
- In a mixing bowl, combine the mung bean puree with salt, minced garlic, scallions, grated carrot, grated zucchini, and black pepper; mix well.
- Heat a non-stick skillet over medium heat and add 1 tablespoon of vegetable oil.
- Pour half of the batter into the skillet, spreading it evenly to form a pancake.
- Cook for about 3-4 minutes on one side until golden brown, then flip and cook for another 3-4 minutes until cooked through.
- Repeat with the remaining batter, adding more oil as needed.
- Drizzle sesame oil on top before serving.
