Ingredients

  • Mung beans - 100 grams
  • Short-grain rice - 150 grams
  • Water - 500 ml
  • Vegetable broth - 250 ml
  • Garlic - 2 cloves, minced
  • Scallions - 2, finely chopped
  • Carrot - 1 small, julienned
  • Olive oil - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Salt - to taste
  • Pepper - to taste
  • Sesame seeds - 1 teaspoon, for garnish

Steps

  1. Rinse the mung beans under cold water and soak them in water for at least 4 hours or overnight.
  2. Drain the soaked mung beans and blend them with 100 ml of water until smooth.
  3. Rinse the short-grain rice under cold water until the water runs clear, then soak it in water for 30 minutes.
  4. In a pot, heat olive oil over medium heat and sauté minced garlic until fragrant, about 1 minute.
  5. Add the blended mung beans to the pot and stir for about 2-3 minutes until slightly thickened.
  6. Add the soaked rice, vegetable broth, and the remaining water (400 ml) to the pot. Stir well and bring to a boil.
  7. Once boiling, reduce heat to low, cover, and simmer for about 20 minutes or until the rice is tender and the liquid is absorbed.
  8. In the last 5 minutes of cooking, add the julienned carrot to the pot to steam.
  9. Remove from heat and let it sit covered for 5 minutes before fluffing with a fork.
  10. Stir in soy sauce, sesame oil, salt, and pepper to taste. Garnish with chopped scallions and sesame seeds before serving.
