  • Octopus - 200 grams, cleaned and sliced
  • Kimchi - 100 grams, chopped
  • Korean radish (mu) - 100 grams, sliced
  • Carrot - 1 medium, julienned
  • Zucchini - 1 small, sliced
  • Green onion - 2 stalks, chopped
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Gochugaru (Korean red pepper flakes) - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Vegetable broth - 500 ml
  • Water - 200 ml
  • Tofu - 100 grams, cubed (optional)
  • Black sesame seeds - for garnish

Steps

  1. In a large pot, heat the sesame oil over medium heat. Add the minced garlic and ginger, sautéing until fragrant, about 1-2 minutes.
  2. Add the chopped kimchi and sauté for another 3-4 minutes until the kimchi is heated through.
  3. Pour in the vegetable broth and water, then bring the mixture to a gentle boil.
  4. Stir in the sliced octopus and bring the stew back to a boil. Reduce heat to a simmer and cook for about 5 minutes.
  5. Add the sliced Korean radish, carrot, and zucchini to the pot. Season with soy sauce and gochugaru, adjusting to taste. Simmer for another 10 minutes until the vegetables are tender.
  6. If using, gently add the cubed tofu and heat through for an additional 2-3 minutes.
  7. Remove from heat and stir in the chopped green onions.
  8. Serve hot, garnished with black sesame seeds.
