Ingredients

  • Zucchini - 1 small, julienned
  • Green bell pepper - 1 small, sliced
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Gochugaru (Korean red pepper flakes) - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Sugar - 1 teaspoon
  • Sesame seeds - 1 tablespoon, toasted
  • Scallions - 2, chopped for garnish

Steps

  1. Heat vegetable oil in a large pan or wok over medium heat.
  2. Add the minced garlic and grated ginger, sautéing for 30 seconds until fragrant.
  3. Add the sliced onion, carrot, zucchini, and green bell pepper; stir-fry for about 5 minutes until the vegetables are slightly tender.
  4. Increase the heat to high and add the octopus pieces, cooking for 3-4 minutes until they are opaque and cooked through.
  5. In a small bowl, mix together the gochugaru, soy sauce, sesame oil, and sugar. Pour this sauce over the octopus and vegetables, stirring well to combine.
  6. Cook for an additional 2-3 minutes, allowing the sauce to coat the ingredients evenly.
  7. Remove from heat and garnish with toasted sesame seeds and chopped scallions before serving.
