Ingredients

  • Nabak Kimchi - 200 grams
  • Vegetable broth - 500 ml
  • Radish (mu) - 100 grams, thinly sliced
  • Carrot - 50 grams, julienned
  • Green onion - 2 stalks, chopped
  • Garlic - 2 cloves, minced
  • Fresh ginger - 1 teaspoon, grated
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Tofu - 100 grams, cubed
  • Korean chili flakes (gochugaru) - 1 teaspoon (optional)
  • Salt - to taste

Steps

  1. In a pot, heat the vegetable broth over medium heat.
  2. Add the minced garlic and grated ginger to the pot, stirring for about 1 minute until fragrant.
  3. Introduce the thinly sliced radish and julienned carrot to the pot, cooking for about 5 minutes until they begin to soften.
  4. Stir in the Nabak Kimchi, soy sauce, and sesame oil, letting the mixture simmer for another 5 minutes.
  5. Add the cubed tofu and chopped green onion to the soup, cooking for an additional 5-7 minutes.
  6. If desired, add gochugaru for extra spice, and season with salt to taste.
  7. Serve hot, garnished with additional green onion if desired.
