- Carrot - 50 grams, julienned
- Green onion - 2 stalks, chopped
- Garlic - 2 cloves, minced
- Fresh ginger - 1 teaspoon, grated
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Tofu - 100 grams, cubed
- Korean chili flakes (gochugaru) - 1 teaspoon (optional)
- Salt - to taste
Steps
- In a pot, heat the vegetable broth over medium heat.
- Add the minced garlic and grated ginger to the pot, stirring for about 1 minute until fragrant.
- Introduce the thinly sliced radish and julienned carrot to the pot, cooking for about 5 minutes until they begin to soften.
- Stir in the Nabak Kimchi, soy sauce, and sesame oil, letting the mixture simmer for another 5 minutes.
- Add the cubed tofu and chopped green onion to the soup, cooking for an additional 5-7 minutes.
- If desired, add gochugaru for extra spice, and season with salt to taste.
- Serve hot, garnished with additional green onion if desired.
