- Radish - 150 grams, julienned
- Carrot - 100 grams, julienned
- Cucumber - 100 grams, julienned
- Red pepper flakes (gochugaru) - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Sugar - 1 teaspoon
- Salt - 1 teaspoon
- Water - 250 milliliters
- Vinegar (preferably rice vinegar) - 2 tablespoons
Steps
- In a large bowl, combine the julienned radish, carrot, and cucumber.
- Sprinkle the salt over the vegetables, mix well, and let them sit for about 15 minutes to draw out moisture.
- In a separate bowl, mix the red pepper flakes, minced garlic, grated ginger, sugar, water, and vinegar to create the marinade.
- After 15 minutes, drain excess moisture from the vegetables and add them to the marinade.
- Toss everything together until the vegetables are well coated in the marinade.
- Let the Nabak-kimchi sit at room temperature for at least 15 minutes before serving for the flavors to meld.
