Ingredients

  • Radish - 150 grams, julienned
  • Carrot - 100 grams, julienned
  • Cucumber - 100 grams, julienned
  • Red pepper flakes (gochugaru) - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Sugar - 1 teaspoon
  • Salt - 1 teaspoon
  • Water - 250 milliliters
  • Vinegar (preferably rice vinegar) - 2 tablespoons

Steps

  1. In a large bowl, combine the julienned radish, carrot, and cucumber.
  2. Sprinkle the salt over the vegetables, mix well, and let them sit for about 15 minutes to draw out moisture.
  3. In a separate bowl, mix the red pepper flakes, minced garlic, grated ginger, sugar, water, and vinegar to create the marinade.
  4. After 15 minutes, drain excess moisture from the vegetables and add them to the marinade.
  5. Toss everything together until the vegetables are well coated in the marinade.
  6. Let the Nabak-kimchi sit at room temperature for at least 15 minutes before serving for the flavors to meld.
