Ingredients
- Short-grain rice - 1 cup
- Water - 1.5 cups
- Myeongran jeot (fermented pollack roe) - 50 grams
- Spinach - 100 grams
- Carrot - 1 medium, julienned
- Sesame oil - 1 tablespoon
- Soy sauce - 1 tablespoon
- Garlic - 2 cloves, minced
- Green onions - 2, chopped
- Sesame seeds - 1 tablespoon
- Salt - to taste
Steps
- Rinse the short-grain rice under cold water until the water runs clear, then soak it in water for 30 minutes.
- In a pot, combine the soaked rice and 1.5 cups of water. Bring it to a boil over medium-high heat, then reduce to low, cover, and cook for 15 minutes or until rice is tender and water is absorbed.
- While the rice is cooking, prepare the vegetables. Blanch the spinach in boiling water for 1-2 minutes until wilted, then drain and squeeze out excess water. Chop into bite-sized pieces.
- In a pan, heat sesame oil over medium heat. Add minced garlic and julienned carrots, sautéing for about 3-4 minutes until the carrots are tender.
- Add the blanched spinach to the pan and stir-fry for another 2 minutes. Season with soy sauce and salt to taste.
- Once the rice is cooked, fluff it with a fork and serve it in bowls. Top with the sautéed vegetables and a generous amount of myeongran jeot.
- Garnish with chopped green onions and sesame seeds before serving.
