Ingredients

  • Firm tofu - 300 grams
  • Cauliflower rice - 200 grams
  • Sesame oil - 1 tablespoon
  • Soy sauce - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Green onion - 2 stalks, chopped
  • Red bell pepper - 1 medium, diced
  • Carrot - 1 small, julienned
  • Spinach - 100 grams, fresh
  • Black sesame seeds - 1 tablespoon
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Press the firm tofu for at least 15 minutes to remove excess moisture, then cut it into bite-sized cubes.
  2. In a large skillet, heat sesame oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  3. Add the diced red bell pepper and julienned carrot to the skillet, cooking for another 3-4 minutes until they start to soften.
  4. Add the pressed tofu cubes to the skillet and gently stir-fry for about 5-7 minutes until the tofu is golden brown.
  5. Stir in the cauliflower rice and cook for an additional 5 minutes, mixing well with the vegetables and tofu.
  6. Add the fresh spinach and soy sauce, cooking until the spinach wilts, about 2-3 minutes.
  7. Season with salt and pepper to taste, then remove from heat.
  8. Garnish with chopped green onions and black sesame seeds before serving.
