Ingredients
- Firm tofu - 300 grams
- Cauliflower rice - 200 grams
- Sesame oil - 1 tablespoon
- Soy sauce - 2 tablespoons
- Garlic - 2 cloves, minced
- Green onion - 2 stalks, chopped
- Red bell pepper - 1 medium, diced
- Carrot - 1 small, julienned
- Spinach - 100 grams, fresh
- Black sesame seeds - 1 tablespoon
- Salt - to taste
- Pepper - to taste
Steps
- Press the firm tofu for at least 15 minutes to remove excess moisture, then cut it into bite-sized cubes.
- In a large skillet, heat sesame oil over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
- Add the diced red bell pepper and julienned carrot to the skillet, cooking for another 3-4 minutes until they start to soften.
- Add the pressed tofu cubes to the skillet and gently stir-fry for about 5-7 minutes until the tofu is golden brown.
- Stir in the cauliflower rice and cook for an additional 5 minutes, mixing well with the vegetables and tofu.
- Add the fresh spinach and soy sauce, cooking until the spinach wilts, about 2-3 minutes.
- Season with salt and pepper to taste, then remove from heat.
- Garnish with chopped green onions and black sesame seeds before serving.
