  • Spinach - 100g, wilted
  • Garlic - 2 cloves, minced
  • Sesame oil - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Sesame seeds - 1 tablespoon
  • Green onion - 1, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Cook the sweet potato noodles according to package instructions, then drain and rinse under cold water to stop cooking.
  2. In a large skillet or wok, heat sesame oil over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds.
  3. Add the julienned carrot, zucchini, and bell pepper to the skillet. Stir-fry for 5-7 minutes until vegetables are tender but still crisp.
  4. Add the wilted spinach to the skillet and stir until just heated through.
  5. In a small bowl, mix together soy sauce, rice vinegar, sesame seeds, salt, and black pepper.
  6. Add the cooked sweet potato noodles to the skillet with the vegetables. Pour the sauce over the noodles and toss everything together until well combined and heated through, about 2-3 minutes.
  7. Remove from heat, garnish with chopped green onion, and serve immediately.
