Steps
- Cook the sweet potato noodles according to package instructions, then drain and rinse under cold water to stop cooking.
- In a large skillet or wok, heat sesame oil over medium heat. Add minced garlic and sauté until fragrant, about 30 seconds.
- Add the julienned carrot, zucchini, and bell pepper to the skillet. Stir-fry for 5-7 minutes until vegetables are tender but still crisp.
- Add the wilted spinach to the skillet and stir until just heated through.
- In a small bowl, mix together soy sauce, rice vinegar, sesame seeds, salt, and black pepper.
- Add the cooked sweet potato noodles to the skillet with the vegetables. Pour the sauce over the noodles and toss everything together until well combined and heated through, about 2-3 minutes.
