- Zucchini - 2 medium
- Carrot - 1 medium
- Red bell pepper - 1 medium
- Chicken breast - 200 grams
- Garlic - 2 cloves, minced
- Sesame oil - 2 tablespoons
- Coconut aminos - 3 tablespoons
- Ginger - 1 teaspoon, grated
- Green onions - 2, chopped
- Sesame seeds - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Spiralize the zucchini and carrot using a spiralizer or julienne peeler to create noodle-like strands.
- Slice the red bell pepper into thin strips.
- In a skillet, heat 1 tablespoon of sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing for 1 minute until fragrant.
- Add the chicken breast to the skillet, season with salt and black pepper, and cook until golden brown and cooked through (about 6-8 minutes). Remove from the skillet and slice into strips.
- In the same skillet, add the remaining sesame oil, spiralized zucchini, carrot, and bell pepper. Stir-fry for 3-4 minutes until the vegetables are tender but still crisp.
- Add the sliced chicken back to the skillet along with the coconut aminos. Toss everything together and cook for an additional 2 minutes.
- Serve the myeon in bowls, garnished with chopped green onions and sesame seeds.
