Ingredients

  • Zucchini - 2 medium
  • Carrot - 1 medium
  • Red bell pepper - 1 medium
  • Chicken breast - 200 grams
  • Garlic - 2 cloves, minced
  • Sesame oil - 2 tablespoons
  • Coconut aminos - 3 tablespoons
  • Ginger - 1 teaspoon, grated
  • Green onions - 2, chopped
  • Sesame seeds - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Spiralize the zucchini and carrot using a spiralizer or julienne peeler to create noodle-like strands.
  2. Slice the red bell pepper into thin strips.
  3. In a skillet, heat 1 tablespoon of sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing for 1 minute until fragrant.
  4. Add the chicken breast to the skillet, season with salt and black pepper, and cook until golden brown and cooked through (about 6-8 minutes). Remove from the skillet and slice into strips.
  5. In the same skillet, add the remaining sesame oil, spiralized zucchini, carrot, and bell pepper. Stir-fry for 3-4 minutes until the vegetables are tender but still crisp.
  6. Add the sliced chicken back to the skillet along with the coconut aminos. Toss everything together and cook for an additional 2 minutes.
  7. Serve the myeon in bowls, garnished with chopped green onions and sesame seeds.
