Ingredients

  • Dried anchovies - 50 grams

  • Erythritol (or preferred low-carb sweetener) - 1 teaspoon
  • Gochugaru (Korean red pepper flakes) - 1 teaspoon
  • Sesame seeds - 1 tablespoon
  • Scallions - 1 stalk, chopped

Steps

  1. Rinse the dried anchovies under cold water and drain well.
  2. In a medium skillet, heat the sesame oil over medium heat.
  3. Add the minced garlic to the skillet and sauté for about 30 seconds until fragrant.
  4. Add the dried anchovies to the skillet and stir-fry for 3-4 minutes until they turn golden and crispy.
  5. In a small bowl, mix the soy sauce, erythritol, and gochugaru until well combined.
  6. Pour the sauce mixture over the anchovies and stir well to coat evenly.
  7. Continue to cook for an additional 2 minutes, allowing the sauce to caramelize slightly.
  8. Remove from heat and garnish with sesame seeds and chopped scallions before serving.
