Ingredients

  • Brown rice - 150 grams
  • Water - 300 ml
  • Mixed mushrooms (shiitake, oyster, and cremini) - 200 grams, sliced
  • Carrot - 1 medium, julienned
  • Zucchini - 1 small, julienned
  • Spinach - 100 grams, blanched
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Gochujang (Korean chili paste) - 1 tablespoon
  • Green onion - 2 stalks, chopped
  • Sesame seeds - 1 tablespoon
  • Nori (seaweed) - 1 sheet, cut into strips
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Preheat the oven to 180°C (350°F).
  2. Rinse the brown rice under cold water until the water runs clear, then combine it with 300 ml of water in a pot and bring to a boil. Cover and simmer for 20 minutes or until the rice is cooked.
  3. While the rice is cooking, heat a skillet over medium heat and add the sesame oil. Once hot, sauté the minced garlic and ginger until fragrant, about 1 minute.
  4. Add the sliced mushrooms, carrot, and zucchini to the skillet. Sauté for about 5-7 minutes until the vegetables are tender. Season with soy sauce, salt, and pepper to taste.
  5. In a large mixing bowl, combine the cooked rice, sautéed vegetables, blanched spinach, gochujang, and chopped green onion. Mix well to combine all ingredients.
  6. Transfer the mixture to a lightly greased baking dish, spreading it evenly. Sprinkle sesame seeds on top.
  7. Bake in the preheated oven for 15-20 minutes until the top is slightly crispy.
  8. Remove from the oven and garnish with nori strips before serving.
