Ingredients
- Brown rice - 150 grams
- Water - 300 ml
- Mixed mushrooms (shiitake, oyster, and cremini) - 200 grams, sliced
- Carrot - 1 medium, julienned
- Zucchini - 1 small, julienned
- Spinach - 100 grams, blanched
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Gochujang (Korean chili paste) - 1 tablespoon
- Green onion - 2 stalks, chopped
- Sesame seeds - 1 tablespoon
- Nori (seaweed) - 1 sheet, cut into strips
- Salt - to taste
- Pepper - to taste
Steps
- Preheat the oven to 180°C (350°F).
- Rinse the brown rice under cold water until the water runs clear, then combine it with 300 ml of water in a pot and bring to a boil. Cover and simmer for 20 minutes or until the rice is cooked.
- While the rice is cooking, heat a skillet over medium heat and add the sesame oil. Once hot, sauté the minced garlic and ginger until fragrant, about 1 minute.
- Add the sliced mushrooms, carrot, and zucchini to the skillet. Sauté for about 5-7 minutes until the vegetables are tender. Season with soy sauce, salt, and pepper to taste.
- In a large mixing bowl, combine the cooked rice, sautéed vegetables, blanched spinach, gochujang, and chopped green onion. Mix well to combine all ingredients.
- Transfer the mixture to a lightly greased baking dish, spreading it evenly. Sprinkle sesame seeds on top.
- Bake in the preheated oven for 15-20 minutes until the top is slightly crispy.
- Remove from the oven and garnish with nori strips before serving.
