Ingredients

  • Cucumber - 200 grams
  • Carrot - 50 grams
  • Garlic - 1 clove
  • Green onion - 1 stalk
  • Sesame oil - 1 teaspoon
  • Soy sauce - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Gochugaru (Korean red pepper flakes) - 1 teaspoon
  • Sugar - 1 teaspoon
  • Sesame seeds - 1 teaspoon
  • Salt - to taste

Steps

  1. Wash the cucumber and carrot thoroughly. Cut the cucumber in half lengthwise, then slice thinly into half-moons. Julienne the carrot into thin strips.
  2. In a small bowl, mince the garlic and finely chop the green onion.
  3. In another bowl, combine the soy sauce, rice vinegar, sesame oil, gochugaru, sugar, and salt. Mix well until the sugar dissolves.
  4. Add the cucumber and carrot to the bowl with the dressing. Toss to coat the vegetables evenly.
  5. Finally, sprinkle sesame seeds and chopped green onion on top before serving.
