- Sweet rice flour (mochi flour) - 100 grams
- Water - 150 ml
- Protein powder (vanilla flavor) - 30 grams
- Honey - 20 grams
- Ground almonds - 20 grams
- Salt - a pinch
- Cornstarch - for dusting - 20 grams
- Red bean paste - 50 grams
Steps
- In a mixing bowl, combine sweet rice flour, protein powder, honey, and a pinch of salt.
- Gradually add water to the mixture, stirring until smooth.
- Transfer the mixture to a microwave-safe bowl and cover it with plastic wrap, leaving a small vent.
- Microwave the mixture on high for 2 minutes, stir, then microwave for another 1-2 minutes until it becomes thick and glossy.
- Dust a clean surface with cornstarch and transfer the mochi mixture onto it. Allow it to cool slightly.
- Once cool enough to handle, knead the mochi gently and divide it into 4 equal portions.
- Flatten each portion and place a small spoonful of red bean paste in the center, then fold the mochi over the filling and pinch to seal.
- Shape the filled mochi into a ball and dust with more cornstarch to prevent sticking.
- Repeat with the remaining portions, then serve fresh or store in an airtight container.
