  • Water - 120 ml
  • Sugar - 30 grams
  • Red bean paste - 50 grams
  • Cornstarch (for dusting) - 20 grams
  • Vanilla extract - 1 teaspoon

Steps

  1. In a mixing bowl, combine sweet rice flour, sugar, and water. Stir until smooth.
  2. Add vanilla extract to the mixture and mix well.
  3. Transfer the mixture to a microwave-safe bowl and cover with plastic wrap.
  4. Microwave on high for 1 minute, then stir. Repeat this process for a total of 3 minutes, stirring after each minute until the dough becomes thick and slightly translucent.
  5. Dust a clean surface with cornstarch. Transfer the mochi dough onto the surface and let it cool for a few minutes.
  6. Once cool enough to handle, divide the dough into 4 equal pieces.
  7. Flatten each piece into a disc and place a small amount of red bean paste in the center.
  8. Fold the edges of the mochi over the filling and pinch to seal, forming a ball.
  9. Roll the finished mochi in cornstarch to prevent sticking, then place on a serving plate.
  10. Serve immediately or refrigerate for later enjoyment.
