- Sugar - 30 grams
- Red bean paste - 50 grams
- Cornstarch (for dusting) - 20 grams
- Vanilla extract - 1 teaspoon
Steps
- In a mixing bowl, combine sweet rice flour, sugar, and water. Stir until smooth.
- Add vanilla extract to the mixture and mix well.
- Transfer the mixture to a microwave-safe bowl and cover with plastic wrap.
- Microwave on high for 1 minute, then stir. Repeat this process for a total of 3 minutes, stirring after each minute until the dough becomes thick and slightly translucent.
- Dust a clean surface with cornstarch. Transfer the mochi dough onto the surface and let it cool for a few minutes.
- Once cool enough to handle, divide the dough into 4 equal pieces.
- Flatten each piece into a disc and place a small amount of red bean paste in the center.
- Fold the edges of the mochi over the filling and pinch to seal, forming a ball.
- Roll the finished mochi in cornstarch to prevent sticking, then place on a serving plate.
- Serve immediately or refrigerate for later enjoyment.
