Ingredients

  • Zucchini - 2 medium (approximately 300g)
  • Soy sauce - 2 tablespoons (30ml)
  • Sesame oil - 1 tablespoon (15ml)
  • Rice vinegar - 1 tablespoon (15ml)
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, freshly grated
  • Brown sugar - 1 teaspoon (5g)
  • Red pepper flakes - 1/2 teaspoon (optional)
  • Sesame seeds - 1 tablespoon (for garnish)
  • Green onions - 2, sliced (for garnish)

Steps

  1. Wash the zucchinis and slice them into 1/2 inch thick rounds or half-moons.
  2. In a mixing bowl, combine soy sauce, sesame oil, rice vinegar, minced garlic, grated ginger, brown sugar, and red pepper flakes (if using). Stir until the sugar is dissolved.
  3. Add the zucchini slices to the marinade, making sure they are well coated. Cover the bowl and let them marinate in the refrigerator for at least 15 minutes.
  4. Preheat a grill or grill pan over medium-high heat.
  5. Remove the zucchini from the marinade, allowing excess marinade to drip off. Reserve the marinade for basting.
  6. Place the zucchini slices on the grill and cook for about 3-4 minutes on each side, basting with the reserved marinade, until they are tender and have nice grill marks.
  7. Once cooked, remove from the grill and garnish with sesame seeds and sliced green onions before serving.
