- Zucchini - 2 medium (approximately 300g)
- Soy sauce - 2 tablespoons (30ml)
- Sesame oil - 1 tablespoon (15ml)
- Rice vinegar - 1 tablespoon (15ml)
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, freshly grated
- Brown sugar - 1 teaspoon (5g)
- Red pepper flakes - 1/2 teaspoon (optional)
- Sesame seeds - 1 tablespoon (for garnish)
- Green onions - 2, sliced (for garnish)
Steps
- Wash the zucchinis and slice them into 1/2 inch thick rounds or half-moons.
- In a mixing bowl, combine soy sauce, sesame oil, rice vinegar, minced garlic, grated ginger, brown sugar, and red pepper flakes (if using). Stir until the sugar is dissolved.
- Add the zucchini slices to the marinade, making sure they are well coated. Cover the bowl and let them marinate in the refrigerator for at least 15 minutes.
- Preheat a grill or grill pan over medium-high heat.
- Remove the zucchini from the marinade, allowing excess marinade to drip off. Reserve the marinade for basting.
- Place the zucchini slices on the grill and cook for about 3-4 minutes on each side, basting with the reserved marinade, until they are tender and have nice grill marks.
- Once cooked, remove from the grill and garnish with sesame seeds and sliced green onions before serving.
