  • Ginger - 1 teaspoon, grated
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Sesame seeds - 1 tablespoon, toasted
  • Green onions - 2 stalks, chopped

Steps

  1. Prepare the lotus root by peeling and slicing it into thin rounds, then soak in water to prevent browning.
  2. Heat a large pan or wok over medium-high heat and add the vegetable oil.
  3. Once the oil is hot, add the sliced lotus root and stir-fry for about 3-4 minutes until slightly tender.
  4. Add the minced garlic and grated ginger, stirring continuously for about 30 seconds until fragrant.
  5. Add the julienned carrot, sliced bell pepper, and zucchini to the pan and stir-fry for another 5-6 minutes until the vegetables are tender-crisp.
