Steps
- Peel and slice the lotus root into thin rounds, about 1/4 inch thick.
- In a mixing bowl, combine the sliced lotus root, cooked quinoa, grated carrot, chopped green onion, minced garlic, soy sauce, sesame oil, cornstarch, salt, and black pepper. Mix until well combined.
