- Korean wheat noodles - 200 grams
- Chicken breast - 150 grams, thinly sliced
- Egg - 2 large
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green onion - 2 stalks, chopped
- Carrot - 1 medium, julienned
- Spinach - 100 grams, washed
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Chicken broth - 500 milliliters
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a large pot of water to a boil. Cook the Korean wheat noodles according to package instructions until al dente. Drain and set aside.
- In a large pan, heat the sesame oil over medium heat. Add the minced garlic and grated ginger, sautéing for about 1 minute until fragrant.
- Add the sliced chicken breast to the pan, cooking until no longer pink, about 5-7 minutes. Season with salt and black pepper.
- Pour in the chicken broth and bring to a simmer. Add the julienned carrot and spinach, cooking for an additional 3-4 minutes until the vegetables are tender.
- In a separate small pot, bring water to a boil and gently add the eggs. Boil for 6-7 minutes for soft-boiled eggs, then transfer to an ice bath to cool. Peel and set aside.
- To serve, divide the cooked noodles into two bowls, ladle the chicken and vegetable broth over the noodles, and top each bowl with a soft-boiled egg and chopped green onions.
