- Zucchini - 2 medium (about 300g)
- Carrot - 1 medium (about 100g)
- Onion - 1 small (about 100g)
- Vegetable oil - 2 tablespoons (30ml)
- Soy sauce - 2 tablespoons (30ml)
- Sesame oil - 1 tablespoon (15ml)
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, minced
- Sesame seeds - 1 tablespoon (optional)
- Green onions - 2 stalks, chopped
Steps
- Wash and slice the zucchini into thin half-moons.
- Peel and julienne the carrot.
- Peel and slice the onion into thin wedges.
- Heat the vegetable oil in a large skillet or wok over medium-high heat.
- Add the garlic and ginger, stir-frying for about 30 seconds until fragrant.
- Add the onion and carrot to the skillet, stir-frying for 2-3 minutes until they start to soften.
- Add the zucchini to the skillet and continue to stir-fry for another 3-4 minutes until it is tender but still crisp.
- Pour the soy sauce and sesame oil over the vegetables, tossing to coat evenly.
- Cook for an additional 1-2 minutes to heat through.
- Remove from heat and garnish with sesame seeds and chopped green onions before serving.
