Ingredients

  • Zucchini - 2 medium (about 300g)
  • Carrot - 1 medium (about 100g)
  • Onion - 1 small (about 100g)
  • Vegetable oil - 2 tablespoons (30ml)
  • Soy sauce - 2 tablespoons (30ml)
  • Sesame oil - 1 tablespoon (15ml)
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, minced
  • Sesame seeds - 1 tablespoon (optional)
  • Green onions - 2 stalks, chopped

Steps

  1. Wash and slice the zucchini into thin half-moons.
  2. Peel and julienne the carrot.
  3. Peel and slice the onion into thin wedges.
  4. Heat the vegetable oil in a large skillet or wok over medium-high heat.
  5. Add the garlic and ginger, stir-frying for about 30 seconds until fragrant.
  6. Add the onion and carrot to the skillet, stir-frying for 2-3 minutes until they start to soften.
  7. Add the zucchini to the skillet and continue to stir-fry for another 3-4 minutes until it is tender but still crisp.
  8. Pour the soy sauce and sesame oil over the vegetables, tossing to coat evenly.
  9. Cook for an additional 1-2 minutes to heat through.
  10. Remove from heat and garnish with sesame seeds and chopped green onions before serving.
