Ingredients

  • Pizza dough - 200 grams
  • Olive oil - 1 tablespoon
  • Shiitake mushrooms - 100 grams, sliced
  • Red bell pepper - 1, thinly sliced
  • Carrot - 1 medium, julienned
  • Zucchini - 1 small, thinly sliced
  • Green onions - 2, chopped
  • Mozzarella cheese - 150 grams, shredded
  • Gochujang (Korean chili paste) - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 teaspoon
  • Sesame seeds - 1 tablespoon
  • Fresh cilantro - 2 tablespoons, chopped

Steps

  1. Preheat the oven to 220°C (428°F).
  2. In a large skillet, heat olive oil over medium heat and sauté the shiitake mushrooms for 3-4 minutes until soft.
  3. Add the red bell pepper, carrot, and zucchini to the skillet and sauté for another 5-6 minutes until the vegetables are tender.
  4. Stir in the chopped green onions, gochujang, soy sauce, and sesame oil, cooking for an additional 2 minutes until well combined.
  5. Roll out the pizza dough on a floured surface to your desired thickness and transfer it to a baking sheet or pizza stone.
  6. Spread the sautéed vegetable mixture evenly over the pizza dough, leaving a small border around the edges.
  7. Sprinkle the shredded mozzarella cheese generously over the top of the vegetables.
  8. Bake the pizza in the preheated oven for 12-15 minutes, or until the crust is golden and the cheese is bubbly.
  9. Remove from the oven and sprinkle sesame seeds and fresh cilantro on top before slicing and serving.
