- Pizza dough - 200 grams
- Olive oil - 1 tablespoon
- Shiitake mushrooms - 100 grams, sliced
- Red bell pepper - 1, thinly sliced
- Carrot - 1 medium, julienned
- Zucchini - 1 small, thinly sliced
- Green onions - 2, chopped
- Mozzarella cheese - 150 grams, shredded
- Gochujang (Korean chili paste) - 2 tablespoons
- Soy sauce - 1 tablespoon
- Sesame oil - 1 teaspoon
- Sesame seeds - 1 tablespoon
- Fresh cilantro - 2 tablespoons, chopped
Steps
- Preheat the oven to 220°C (428°F).
- In a large skillet, heat olive oil over medium heat and sauté the shiitake mushrooms for 3-4 minutes until soft.
- Add the red bell pepper, carrot, and zucchini to the skillet and sauté for another 5-6 minutes until the vegetables are tender.
- Stir in the chopped green onions, gochujang, soy sauce, and sesame oil, cooking for an additional 2 minutes until well combined.
- Roll out the pizza dough on a floured surface to your desired thickness and transfer it to a baking sheet or pizza stone.
- Spread the sautéed vegetable mixture evenly over the pizza dough, leaving a small border around the edges.
- Sprinkle the shredded mozzarella cheese generously over the top of the vegetables.
- Bake the pizza in the preheated oven for 12-15 minutes, or until the crust is golden and the cheese is bubbly.
- Remove from the oven and sprinkle sesame seeds and fresh cilantro on top before slicing and serving.
