- Broccoli - 100 grams, cut into small florets

- Coconut milk - 400 ml (1 can)
- Soy sauce - 2 tablespoons
- Sugar - 1 teaspoon

- Black pepper - to taste
- Green onions - 2, chopped (for garnish)
- Sesame seeds - 1 tablespoon (for garnish)
Steps
- Rinse the jasmine rice under cold water until the water runs clear, then combine it with 2 cups of water in a pot. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes or until the rice is cooked and water is absorbed.
- While the rice is cooking, heat the vegetable oil in a large pan over medium heat. Add the diced onion and sauté for 2-3 minutes until softened.
- Add the minced garlic, sliced carrot, diced zucchini, and bell pepper to the pan. Cook for another 5 minutes, stirring occasionally until the vegetables are slightly tender.
- Stir in the broccoli florets, curry powder, and cook for an additional 2 minutes until the spices are fragrant.
- Pour in the coconut milk, soy sauce, and sugar. Stir well to combine and let the mixture simmer for 10 minutes, allowing the flavors to meld. Season with salt and black pepper to taste.
- Once the rice is cooked, fluff it with a fork and serve it on plates topped with the vegetable curry. Garnish with chopped green onions and sesame seeds.
