Ingredients

  • glutinous rice flour - 150 grams
  • water - 120 ml
  • red bean paste - 100 grams
  • sugar - 20 grams
  • cornstarch - 10 grams
  • crushed almonds - 30 grams
  • coconut flakes - 30 grams
  • salt - a pinch

Steps

  1. In a mixing bowl, combine the glutinous rice flour, sugar, and a pinch of salt.
  2. Gradually add water while stirring until a smooth dough forms.
  3. Divide the dough into small pieces (about 30 grams each) and flatten each piece in your palm.
  4. Place a small amount (about 1 teaspoon) of red bean paste in the center of each flattened dough, then fold the edges over the filling and roll into a ball.
  5. In a pot of boiling water, gently drop the rice balls and cook for about 8-10 minutes until they float to the surface.
  6. While the rice balls are cooking, prepare a plate with a mix of crushed almonds and coconut flakes.
  7. Once cooked, remove the rice balls with a slotted spoon and let them cool slightly before rolling them in the almond and coconut mixture.
  8. Serve warm or at room temperature.
