Ingredients
- Sweet potato noodles - 100 grams
- Carrot - 1 medium, julienned
- Spinach - 100 grams
- Bell pepper (red) - 1 medium, thinly sliced
- Mushrooms (shiitake or button) - 100 grams, sliced
- Onion - 1 small, thinly sliced
- Garlic - 2 cloves, minced
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Vegetable oil - 1 tablespoon
- Sesame seeds - 1 tablespoon, toasted
- Green onion - 2 stalks, chopped
- Salt - to taste
- Pepper - to taste
Steps
- Soak the sweet potato noodles in warm water for about 30 minutes until they soften, then drain and set aside.
- In a large pan or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
- Add the sliced onion and carrot to the pan and stir-fry for 2-3 minutes until they start to soften.
- Add the sliced bell pepper and mushrooms to the pan and continue to stir-fry for another 3-4 minutes until all the vegetables are tender.
- Add the spinach to the pan and stir until wilted, about 1 minute.
- Introduce the soaked sweet potato noodles to the pan, followed by the soy sauce and sesame oil. Toss everything together for about 3-5 minutes until the noodles are heated through and well coated with the sauce.
- Season with salt and pepper to taste. Remove from heat and sprinkle with toasted sesame seeds and chopped green onion before serving.
