Ingredients

  • Sweet potato noodles - 100 grams
  • Carrot - 1 medium, julienned
  • Spinach - 100 grams
  • Bell pepper (red) - 1 medium, thinly sliced
  • Mushrooms (shiitake or button) - 100 grams, sliced
  • Onion - 1 small, thinly sliced
  • Garlic - 2 cloves, minced
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Vegetable oil - 1 tablespoon
  • Sesame seeds - 1 tablespoon, toasted
  • Green onion - 2 stalks, chopped
  • Salt - to taste
  • Pepper - to taste

Steps

  1. Soak the sweet potato noodles in warm water for about 30 minutes until they soften, then drain and set aside.
  2. In a large pan or wok, heat the vegetable oil over medium-high heat. Add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Add the sliced onion and carrot to the pan and stir-fry for 2-3 minutes until they start to soften.
  4. Add the sliced bell pepper and mushrooms to the pan and continue to stir-fry for another 3-4 minutes until all the vegetables are tender.
  5. Add the spinach to the pan and stir until wilted, about 1 minute.
  6. Introduce the soaked sweet potato noodles to the pan, followed by the soy sauce and sesame oil. Toss everything together for about 3-5 minutes until the noodles are heated through and well coated with the sauce.
  7. Season with salt and pepper to taste. Remove from heat and sprinkle with toasted sesame seeds and chopped green onion before serving.
