Ingredients

  • 200g sweet potatoes - peeled and cubed
  • 50g cooked quinoa
  • 1 tablespoon sesame oil
  • 1 tablespoon gochujang (Korean chili paste)
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder
  • Salt - to taste
  • Pepper - to taste
  • 50g breadcrumbs
  • 2 whole wheat burger buns
  • 1 small cucumber - thinly sliced
  • 1 small carrot - grated
  • 2 lettuce leaves
  • 2 tablespoons mayonnaise
  • 1 teaspoon rice vinegar

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Spread the cubed sweet potatoes on a baking sheet and drizzle with sesame oil. Roast in the oven for 20-25 minutes, or until tender.
  3. In a mixing bowl, mash the roasted sweet potatoes and combine with cooked quinoa, gochujang, garlic powder, ginger powder, salt, and pepper. Mix well until fully combined.
  4. Add breadcrumbs to the mixture to help bind the patty. Form two patties from the mixture.
  5. Heat a non-stick skillet over medium heat and lightly grease it. Cook the patties for 4-5 minutes on each side, or until golden brown.
  6. In a small bowl, mix mayonnaise with rice vinegar to create a spicy mayo.
  7. To assemble the burger, place a lettuce leaf on the bottom half of each bun, followed by the sweet potato patty, cucumber slices, grated carrot, and a generous dollop of spicy mayo. Top with the other half of the bun.
