Ingredients

  • Quinoa - 100 grams
  • Carrot - 50 grams, grated
  • Zucchini - 50 grams, grated
  • Mushrooms - 100 grams, finely chopped
  • Green onion - 2 stalks, chopped
  • Garlic - 2 cloves, minced
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Cornstarch - 2 tablespoons
  • Egg - 1 large
  • Panko breadcrumbs - 50 grams
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Burger buns - 2 whole grain
  • Lettuce leaves - 2
  • Tomato - 1, sliced
  • Gochujang - 1 tablespoon
  • Mayonnaise - 2 tablespoons

Steps

  1. Rinse the quinoa under cold water and cook it in a pot with 200ml of water. Bring to a boil, then reduce heat, cover, and simmer for 15 minutes until water is absorbed. Remove from heat and let it cool.
  2. In a large bowl, combine the grated carrot, grated zucchini, chopped mushrooms, chopped green onion, and minced garlic.
  3. Add the cooked quinoa to the vegetable mixture along with soy sauce, sesame oil, cornstarch, egg, panko breadcrumbs, salt, and black pepper. Mix until well combined.
  4. Form the mixture into two patties, about 1.5 cm thick.
  5. Heat a non-stick skillet over medium heat and add a little oil. Cook the patties for about 4-5 minutes on each side or until golden brown.
  6. In a small bowl, mix gochujang and mayonnaise to create a spicy sauce.
  7. Toast the burger buns lightly on the skillet.
  8. Assemble the burgers by placing a lettuce leaf and a slice of tomato on the bottom half of each bun, adding the veggie patty, and spreading the gochujang mayo on top. Cover with the top half of the bun.
  9. Serve immediately with your favorite side.
