Ingredients

  • Zucchini - 2 medium
  • Ground chicken - 200 grams
  • Green onion - 2 stalks, finely chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Carrot - 1 small, finely chopped
  • Soy sauce - 2 tablespoons
  • Sesame oil - 1 tablespoon
  • Gochugaru (Korean red pepper flakes) - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Sesame seeds - 1 tablespoon, toasted
  • Cooking oil - 1 tablespoon for frying

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Slice the zucchini in half lengthwise and scoop out the seeds to create a hollow space for the stuffing.
  3. In a mixing bowl, combine ground chicken, chopped green onion, minced garlic, grated ginger, finely chopped carrot, soy sauce, sesame oil, gochugaru, salt, and black pepper. Mix thoroughly until well combined.
  4. Heat a skillet over medium heat and add the cooking oil. Once hot, spoon the chicken mixture into the hollowed zucchini halves, pressing it down gently to pack it tightly.
  5. Place the stuffed zucchini in a baking dish and cover with aluminum foil. Bake in the preheated oven for 20 minutes.
  6. After 20 minutes, remove the foil and sprinkle toasted sesame seeds on top. Bake for an additional 5 minutes until the chicken is cooked through and the zucchini is tender.
  7. Remove from the oven, let cool for a few minutes, then slice into bite-sized pieces and serve warm.
