- Zucchini - 2 medium
- Ground chicken - 200 grams
- Green onion - 2 stalks, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Carrot - 1 small, finely chopped
- Soy sauce - 2 tablespoons
- Sesame oil - 1 tablespoon
- Gochugaru (Korean red pepper flakes) - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Sesame seeds - 1 tablespoon, toasted
- Cooking oil - 1 tablespoon for frying
Steps
- Preheat your oven to 180°C (350°F).
- Slice the zucchini in half lengthwise and scoop out the seeds to create a hollow space for the stuffing.
- In a mixing bowl, combine ground chicken, chopped green onion, minced garlic, grated ginger, finely chopped carrot, soy sauce, sesame oil, gochugaru, salt, and black pepper. Mix thoroughly until well combined.
- Heat a skillet over medium heat and add the cooking oil. Once hot, spoon the chicken mixture into the hollowed zucchini halves, pressing it down gently to pack it tightly.
- Place the stuffed zucchini in a baking dish and cover with aluminum foil. Bake in the preheated oven for 20 minutes.
- After 20 minutes, remove the foil and sprinkle toasted sesame seeds on top. Bake for an additional 5 minutes until the chicken is cooked through and the zucchini is tender.
- Remove from the oven, let cool for a few minutes, then slice into bite-sized pieces and serve warm.
