Ingredients
- quinoa - 100 grams
- water - 250 milliliters
- carrot - 1 medium, grated
- green onion - 2 stalks, finely chopped
- garlic - 2 cloves, minced
- ginger - 1 teaspoon, grated
- soy sauce - 1 tablespoon
- sesame oil - 1 tablespoon
- gochugaru (Korean red pepper flakes) - 1 teaspoon
- bread crumbs - 50 grams
- egg - 1 large
- salt - 1/2 teaspoon
- black pepper - 1/4 teaspoon

- kimchi - 100 grams, chopped
- mayonnaise - 2 tablespoons
- lettuce leaves - 2
Steps
- Rinse the quinoa under cold water and then combine it with 250 milliliters of water in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until the water is absorbed.
- In a large mixing bowl, combine the cooked quinoa, grated carrot, chopped green onion, minced garlic, grated ginger, soy sauce, sesame oil, gochugaru, bread crumbs, egg, salt, and black pepper. Mix until well combined.
- Form the mixture into two equal-sized patties.
- Heat a non-stick skillet over medium heat and add a little oil. Cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.
- In a small bowl, mix the chopped kimchi with mayonnaise to create the kimchi mayo.
- To assemble, place each patty on a burger bun, top with lettuce leaves, and spread the kimchi mayo generously over the top. Close the bun and serve.
