Ingredients

  • Cucumber - 200 grams
  • Carrot - 50 grams
  • Radish - 50 grams
  • Salt - 1 teaspoon
  • Rice vinegar - 2 tablespoons
  • Water - 100 milliliters
  • Sugar - 1 tablespoon
  • Gochugaru (Korean red pepper flakes) - 1 teaspoon
  • Garlic - 1 clove, minced
  • Sesame oil - 1 teaspoon
  • Green onion - 1 stalk, chopped

Steps

  1. Wash and slice the cucumber, carrot, and radish into thin, bite-sized pieces.
  2. In a bowl, combine the sliced vegetables with salt and let them sit for about 10 minutes to draw out moisture.
  3. In another bowl, whisk together rice vinegar, water, sugar, gochugaru, minced garlic, and sesame oil until the sugar is dissolved.
  4. After 10 minutes, rinse the salted vegetables under cold water and drain them well.
  5. Add the rinsed vegetables to the vinegar mixture and toss until well coated.
  6. Let the pickles marinate for at least 5 minutes before serving. Optionally, garnish with chopped green onion.
