- Cucumber - 200 grams
- Carrot - 50 grams
- Radish - 50 grams
- Salt - 1 teaspoon
- Rice vinegar - 2 tablespoons
- Water - 100 milliliters
- Sugar - 1 tablespoon
- Gochugaru (Korean red pepper flakes) - 1 teaspoon
- Garlic - 1 clove, minced
- Sesame oil - 1 teaspoon
- Green onion - 1 stalk, chopped
Steps
- Wash and slice the cucumber, carrot, and radish into thin, bite-sized pieces.
- In a bowl, combine the sliced vegetables with salt and let them sit for about 10 minutes to draw out moisture.
- In another bowl, whisk together rice vinegar, water, sugar, gochugaru, minced garlic, and sesame oil until the sugar is dissolved.
- After 10 minutes, rinse the salted vegetables under cold water and drain them well.
- Add the rinsed vegetables to the vinegar mixture and toss until well coated.
- Let the pickles marinate for at least 5 minutes before serving. Optionally, garnish with chopped green onion.
