Korean Style Lentil Burger

- Brown lentils - 150 grams
- Water - 500 milliliters
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Green onion - 2, finely chopped
- Soy sauce - 1 tablespoon
- Gochujang (Korean chili paste) - 1 tablespoon
- Sesame oil - 1 teaspoon
- Bread crumbs - 50 grams
- Egg - 1, beaten
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Burger buns - 2
- Lettuce leaves - 2
- Tomato - 1, sliced
- Cucumber - 1/2, sliced
- Gochujang mayo - 2 tablespoons (mix 1 tablespoon gochujang with 2 tablespoons mayonnaise)
Steps
- Rinse the brown lentils under cold water and combine them with 500 milliliters of water in a pot. Bring to a boil, then reduce heat and simmer for about 20-25 minutes until tender. Drain and let cool slightly.
- In a large mixing bowl, combine the cooked lentils, minced garlic, grated ginger, chopped green onion, soy sauce, gochujang, sesame oil, bread crumbs, beaten egg, salt, and black pepper. Mix until well combined.
- Shape the lentil mixture into two patties, about 1.5 cm thick. Place them on a plate and refrigerate for 10-15 minutes to firm up.
- Heat a non-stick skillet over medium heat and add a little oil. Cook the patties for about 4-5 minutes on each side, until golden brown and heated through.
- To assemble the burger, spread gochujang mayo on the bottom half of each burger bun. Place a lettuce leaf on top, followed by the lentil patty, sliced tomato, and cucumber. Top with the other half of the bun and serve immediately.
