Ingredients

  • All-purpose flour - 250 grams
  • Warm water - 150 ml
  • Active dry yeast - 5 grams
  • Sugar - 10 grams
  • Salt - 5 grams
  • Baking soda - 10 grams
  • Sesame oil - 15 ml
  • Soy sauce - 15 ml
  • Sesame seeds - 10 grams
  • Cream cheese - 100 grams
  • Sriracha - 15 grams
  • Chopped green onions - 10 grams

Steps

  1. In a small bowl, combine warm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy.
  2. In a large bowl, mix the flour and salt. Once the yeast mixture is ready, add it to the flour and mix until a dough forms.
  3. Knead the dough on a floured surface for about 5-7 minutes until it's smooth and elastic.
  4. Place the dough in a lightly oiled bowl, cover with a damp cloth, and let it rise in a warm place for 30 minutes or until doubled in size.
  5. Preheat your oven to 220°C (425°F).
  6. Once risen, punch down the dough and divide it into 4 equal pieces. Shape each piece into a bagel by rolling it into a ball and then poking a hole in the center, stretching it to form a ring.
  7. In a large pot, bring water to a boil and add baking soda. Boil each bagel for about 1 minute on each side.
  8. Remove the bagels from the water and place them on a baking sheet lined with parchment paper. Brush the tops with a mixture of sesame oil and soy sauce, and sprinkle with sesame seeds.
  9. Bake in the preheated oven for 20-25 minutes, or until golden brown.
  10. While the bagels are baking, mix the cream cheese with sriracha and chopped green onions to create a spicy spread.
  11. Once the bagels are done, let them cool slightly before serving with the spicy cream cheese spread.
