Ingredients
- 2 medium bell peppers (red or green)
- 200g ground turkey
- 50g kimchi, finely chopped
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1 teaspoon minced garlic
- 1 teaspoon minced ginger
- 2 green onions, finely chopped
- 1 tablespoon gochujang (Korean chili paste)
- 1 tablespoon cooked quinoa
- Salt and pepper to taste
- Sesame seeds for garnish
Steps
- Preheat your oven to 180°C (350°F).
- Cut the tops off the bell peppers and remove the seeds and membranes.
- In a mixing bowl, combine ground turkey, chopped kimchi, soy sauce, sesame oil, minced garlic, minced ginger, green onions, gochujang, cooked quinoa, and season with salt and pepper.
- Stuff each bell pepper with the turkey and kimchi mixture until full.
- Place the stuffed peppers upright in a baking dish and cover with aluminum foil.
- Bake in the preheated oven for 20 minutes, then remove the foil and bake for an additional 10 minutes until the turkey is cooked through and the peppers are tender.
- Remove from the oven, let cool slightly, and garnish with sesame seeds before serving.
