Ingredients

  • 2 medium bell peppers (red or green)
  • 200g ground turkey
  • 50g kimchi, finely chopped
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon minced garlic
  • 1 teaspoon minced ginger
  • 2 green onions, finely chopped
  • 1 tablespoon gochujang (Korean chili paste)
  • 1 tablespoon cooked quinoa
  • Salt and pepper to taste
  • Sesame seeds for garnish

Steps

  1. Preheat your oven to 180°C (350°F).
  2. Cut the tops off the bell peppers and remove the seeds and membranes.
  3. In a mixing bowl, combine ground turkey, chopped kimchi, soy sauce, sesame oil, minced garlic, minced ginger, green onions, gochujang, cooked quinoa, and season with salt and pepper.
  4. Stuff each bell pepper with the turkey and kimchi mixture until full.
  5. Place the stuffed peppers upright in a baking dish and cover with aluminum foil.
  6. Bake in the preheated oven for 20 minutes, then remove the foil and bake for an additional 10 minutes until the turkey is cooked through and the peppers are tender.
  7. Remove from the oven, let cool slightly, and garnish with sesame seeds before serving.
