  • Garlic - 2 cloves (minced)
  • Sesame oil - 1 tablespoon (15ml)
  • Soy sauce (low sodium) - 1 tablespoon (15ml)
  • Gochugaru (Korean red pepper flakes) - 1 teaspoon (5g)
  • Sugar substitute (erythritol or similar) - 1 teaspoon (4g)
  • Sesame seeds - 1 teaspoon (5g)
  • Green onions - 2 stalks (chopped)
  • Salt - to taste

Steps

  1. Wash and slice the red, green, and yellow bell peppers into thin strips.
  2. Heat the sesame oil in a large skillet over medium heat.
  3. Add the minced garlic to the skillet and sauté until fragrant, about 30 seconds.
  4. Add the sliced bell peppers to the skillet and stir-fry for 5-7 minutes, until they are tender-crisp.
  5. Stir in the soy sauce, gochugaru, and sugar substitute, mixing well to coat the peppers evenly.
  6. Cook for an additional 2-3 minutes, allowing the flavors to meld.
  7. Remove from heat and sprinkle with sesame seeds and chopped green onions.
  8. Serve warm as a side dish.
