- Fresh spinach - 200 grams

Steps
- Wash the fresh spinach thoroughly under running water and drain well.
- Bring a pot of water to a boil and blanch the spinach for about 1-2 minutes until wilted.
- Remove the spinach from boiling water and immediately transfer it to a bowl of ice water to stop the cooking process.
- Once cooled, drain the spinach again and gently squeeze out excess water.
- In a mixing bowl, combine the blanched spinach, sesame oil, soy sauce, minced garlic, sesame seeds, and red pepper flakes (if using).
- Toss everything together until the spinach is evenly coated with the dressing.
- Taste and season with salt as needed.
