Ingredients

  • Korean rice cakes (tteok) - 200 grams
  • Vegetable broth - 250 ml
  • Gochujang (Korean red chili paste) - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Maple syrup - 1 tablespoon
  • Garlic, minced - 2 cloves
  • Green onions, chopped - 2 stalks
  • Carrot, julienned - 1 small
  • Cabbage, chopped - 100 grams
  • Sesame oil - 1 teaspoon
  • Sesame seeds - 1 teaspoon
  • Red pepper flakes (optional) - 1 teaspoon

Steps

  1. In a medium pot, bring the vegetable broth to a simmer over medium heat.
  2. Add the gochujang, soy sauce, maple syrup, and minced garlic to the pot, stirring well to combine.
  3. Add the rice cakes to the simmering sauce and cook for about 10 minutes, stirring occasionally until the rice cakes become soft and chewy.
  4. In the last 5 minutes of cooking, add the julienned carrot and chopped cabbage to the pot, mixing them into the sauce.
  5. Once everything is cooked and well combined, drizzle the sesame oil over the dish and stir.
  6. Serve hot, garnished with chopped green onions and a sprinkle of sesame seeds. Add red pepper flakes for extra heat if desired.
