Ingredients

  • Pork belly - 300 grams, sliced thinly
  • Gochujang (Korean red pepper paste) - 2 tablespoons
  • Soy sauce - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Garlic - 3 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onions - 2, chopped
  • Zucchini - 1 medium, sliced into thin strips
  • Bell pepper - 1 medium, sliced
  • Mushrooms - 100 grams, sliced
  • Black pepper - 1/2 teaspoon
  • Sesame seeds - 1 tablespoon, for garnish

Steps

  1. In a bowl, combine gochujang, soy sauce, sesame oil, minced garlic, grated ginger, and black pepper to create the marinade.
  2. Add the sliced pork belly to the marinade, ensuring it's well-coated. Let it marinate for at least 15 minutes.
  3. Heat a large skillet or wok over medium-high heat. Add the marinated pork and stir-fry for about 5-7 minutes until it's cooked through and slightly caramelized.
  4. Add the zucchini, bell pepper, and mushrooms to the skillet. Stir-fry for an additional 5-7 minutes until the vegetables are tender-crisp.
  5. Remove from heat, garnish with chopped green onions and sesame seeds, and serve immediately.
