Steps
- In a bowl, combine gochujang, soy sauce, sesame oil, minced garlic, grated ginger, and black pepper to create the marinade.
- Add the sliced pork belly to the marinade, ensuring it's well-coated. Let it marinate for at least 15 minutes.
- Heat a large skillet or wok over medium-high heat. Add the marinated pork and stir-fry for about 5-7 minutes until it's cooked through and slightly caramelized.
- Add the zucchini, bell pepper, and mushrooms to the skillet. Stir-fry for an additional 5-7 minutes until the vegetables are tender-crisp.
- Remove from heat, garnish with chopped green onions and sesame seeds, and serve immediately.
