- Gochugaru (Korean red pepper flakes) - 1 tablespoon
- Garlic (minced) - 1 clove
- Sesame oil - 1 teaspoon
- Sesame seeds - 1 teaspoon
Steps
- Peel the Korean radish and cut it into thin strips or matchsticks.
- In a mixing bowl, combine the radish strips with salt and let it sit for about 10 minutes to draw out moisture.
- After 10 minutes, rinse the radish under cold water and drain well.
- In another bowl, mix together the sugar, rice vinegar, gochugaru, minced garlic, and sesame oil until the sugar is dissolved.
- Add the drained radish to the dressing mixture and toss well to coat.
- Sprinkle sesame seeds on top and mix again.
- Transfer the pickled radish to a clean jar or container, seal it, and refrigerate for at least 1 hour before serving for the best flavor.
