Ingredients

  • Rice noodles - 150 grams
  • Cooked chicken breast, shredded - 100 grams
  • Edamame (shelled) - 100 grams
  • Cucumber, julienned - 1 medium
  • Carrot, julienned - 1 medium
  • Red bell pepper, thinly sliced - 1 medium
  • Green onions, chopped - 2 stalks
  • Sesame oil - 2 tablespoons
  • Soy sauce - 2 tablespoons
  • Gochujang (Korean chili paste) - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Honey - 1 teaspoon
  • Sesame seeds - 1 tablespoon
  • Salt - to taste

Steps

  1. Cook the rice noodles according to package instructions, then drain and rinse under cold water to cool.
  2. In a large mixing bowl, combine the shredded chicken, edamame, cucumber, carrot, red bell pepper, and green onions.
  3. In a separate small bowl, whisk together the sesame oil, soy sauce, gochujang, rice vinegar, honey, and salt until well combined.
  4. Add the cooled noodles to the vegetable and chicken mixture, then pour the dressing over the top.
  5. Toss everything together until well coated with the dressing.
  6. Garnish with sesame seeds before serving.
