Ingredients

  • Chicken thighs - 300 grams, boneless and skinless
  • Soy sauce - 2 tablespoons
  • Gochujang (Korean chili paste) - 1 tablespoon
  • Sesame oil - 1 tablespoon
  • Honey - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Green onions - 2, chopped
  • Carrot - 1 medium, sliced
  • Bell pepper - 1 medium, sliced
  • Sesame seeds - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a mixing bowl, combine soy sauce, gochujang, sesame oil, honey, minced garlic, grated ginger, black pepper, and a pinch of salt to create the marinade.
  3. Add the chicken thighs to the bowl and coat them thoroughly with the marinade. Let it marinate for at least 15 minutes.
  4. In a baking dish, arrange the marinated chicken thighs, followed by the sliced carrot and bell pepper.
  5. Pour any remaining marinade from the bowl over the chicken and vegetables.
  6. Bake in the preheated oven for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 75°C (165°F).
  7. Once done, remove from the oven and sprinkle with chopped green onions and sesame seeds before serving.
