- Quinoa - 100 grams
- Water - 250 ml
- Carrot - 50 grams, grated
- Green onion - 2, finely chopped
- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Soy sauce - 1 tablespoon
- Gochujang - 1 tablespoon
- Chickpea flour - 50 grams
- Sesame oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cucumber - 1, sliced for topping
- Lettuce leaves - 4 for serving
- Whole grain burger buns - 2
- Vegan mayonnaise - 2 tablespoons
- Lime juice - 1 teaspoon
Steps
- Rinse the quinoa under cold water and combine it with 250 ml of water in a saucepan. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes until the quinoa is fluffy and the water is absorbed.
- In a large mixing bowl, combine the cooked quinoa, grated carrot, chopped green onion, minced garlic, grated ginger, soy sauce, gochujang, chickpea flour, sesame oil, salt, and black pepper. Mix well until everything is evenly combined.
- Form the mixture into two patties, pressing firmly to hold them together. If the mixture feels too loose, add a bit more chickpea flour.
- Heat a non-stick skillet over medium heat and add a little oil if necessary. Cook the patties for about 4-5 minutes on each side, or until golden brown and heated through.
- While the patties are cooking, prepare the spicy mayo by mixing the vegan mayonnaise with lime juice and an additional teaspoon of gochujang (optional).
- To assemble the burgers, place each patty on a whole grain bun, top with lettuce, cucumber slices, and a generous dollop of the spicy mayo. Serve immediately.
