Ingredients

  • canned chickpeas - 240 grams, drained and rinsed
  • green onion - 2 stalks, finely chopped
  • garlic - 2 cloves, minced
  • fresh ginger - 1 teaspoon, grated
  • gochujang (Korean chili paste) - 1 tablespoon
  • soy sauce - 1 tablespoon
  • sesame oil - 1 tablespoon
  • bread crumbs - 50 grams
  • flour - 2 tablespoons
  • salt - 1/2 teaspoon
  • black pepper - 1/4 teaspoon
  • cooking oil - for frying
  • burger buns - 2, dairy-free
  • lettuce - 2 leaves
  • sliced cucumber - 1/2, for topping
  • sliced avocado - 1/2, for topping
  • sriracha - for drizzling (optional)

Steps

  1. In a mixing bowl, mash the drained chickpeas with a fork or potato masher until mostly smooth, leaving some chunks for texture.
  2. Add the chopped green onion, minced garlic, grated ginger, gochujang, soy sauce, sesame oil, and mix well.
  3. Stir in the bread crumbs, flour, salt, and black pepper until fully combined. The mixture should be moist but hold together; adjust with more flour or bread crumbs if too wet.
  4. Form the mixture into 2 equal-sized patties, about 1.5 cm thick.
  5. Heat a non-stick skillet over medium heat and add a splash of cooking oil.
  6. Cook the patties for about 4-5 minutes on each side, or until golden brown and crispy.
  7. Toast the burger buns in the same skillet until lightly browned.
  8. Assemble the burgers by placing a lettuce leaf on the bottom bun, followed by the chickpea patty, sliced cucumber, and avocado. Drizzle with sriracha if desired, then top with the other half of the bun.
  9. Serve immediately with your favorite side.
