Steps
- Wash the spinach thoroughly under cold water and drain well.
- Bring a pot of water to a boil and add a pinch of salt.
- Blanch the spinach in the boiling water for about 30 seconds until wilted, then immediately transfer it to an ice bath to stop the cooking process.
- Once cooled, drain the spinach and gently squeeze out excess water.
- In a mixing bowl, combine the minced garlic, sesame oil, soy sauce, rice vinegar, and salt. Whisk until well combined.
- Add the blanched spinach to the bowl and toss gently to coat the spinach with the dressing.
- Sprinkle toasted sesame seeds on top and mix lightly again.
- Serve immediately or chill in the refrigerator for 10 minutes before serving for enhanced flavor.
