Ingredients

  • Adzuki beans - 100 grams
  • Water - 1 liter (for boiling beans)
  • Water - 500 milliliters (for soup)
  • Sugar - 50 grams (adjust to taste)
  • Salt - a pinch
  • Glutinous rice flour - 30 grams
  • Water - 60 milliliters (for dough)
  • Sesame oil - 1 teaspoon (optional for flavor)

Steps

  1. Rinse the adzuki beans under cold water and soak them in water for at least 4 hours or overnight.
  2. Drain the soaked beans and place them in a pot with 1 liter of water. Bring to a boil and then reduce to a simmer for about 30-40 minutes, or until the beans are tender.
  3. Once cooked, drain the beans and mash them with a fork or a potato masher, leaving some whole for texture.
  4. Return the mashed beans to the pot, add 500 milliliters of water, and stir in the sugar and a pinch of salt. Heat over medium heat until the mixture is smooth and heated through, about 5-10 minutes.
  5. In a separate bowl, mix the glutinous rice flour with 60 milliliters of water to form a soft dough. If the dough is too dry, add a bit more water.
  6. Shape the dough into small balls (about 1 cm in diameter).
  7. Add the rice balls to the simmering red bean soup and cook for an additional 10 minutes, or until the balls float to the surface.
  8. Serve warm, drizzled with sesame oil if desired.
