- Adzuki beans - 100 grams

- Salt - a pinch
- Glutinous rice flour - 30 grams
- Water - 60 milliliters (for dough)
- Sesame oil - 1 teaspoon (optional for flavor)
Steps
- Rinse the adzuki beans under cold water and soak them in water for at least 4 hours or overnight.
- Drain the soaked beans and place them in a pot with 1 liter of water. Bring to a boil and then reduce to a simmer for about 30-40 minutes, or until the beans are tender.
- Once cooked, drain the beans and mash them with a fork or a potato masher, leaving some whole for texture.
- Return the mashed beans to the pot, add 500 milliliters of water, and stir in the sugar and a pinch of salt. Heat over medium heat until the mixture is smooth and heated through, about 5-10 minutes.
- In a separate bowl, mix the glutinous rice flour with 60 milliliters of water to form a soft dough. If the dough is too dry, add a bit more water.
- Shape the dough into small balls (about 1 cm in diameter).
- Add the rice balls to the simmering red bean soup and cook for an additional 10 minutes, or until the balls float to the surface.
- Serve warm, drizzled with sesame oil if desired.
