- Green bell pepper - 1 small, diced
- Sesame oil - 1 tablespoon
- Soy sauce - 1 tablespoon (ensure it's halal)
- Gochujang (Korean chili paste) - 1 tablespoon
- Cheddar cheese - 100 grams, shredded
- Green onions - 2, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat your oven to 200°C (400°F).
- Peel and slice the potatoes into thin rounds, about 0.5 cm thick.
- In a skillet, heat the sesame oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
- Add the diced carrot and green bell pepper to the skillet, cooking for another 4-5 minutes until softened.
- Stir in the soy sauce and gochujang, mixing well to combine all the ingredients. Season with salt and black pepper to taste.
- In a baking dish, layer half of the potato slices evenly. Spread half of the vegetable mixture over the potatoes, then sprinkle half of the shredded cheese.
- Repeat the layering process with the remaining potatoes, vegetable mixture, and cheese.
- Cover the baking dish with aluminum foil and bake for 25 minutes.
- Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
- Once done, remove from the oven and let it sit for a few minutes. Garnish with chopped green onions before serving.
