Ingredients

  • Potatoes - 400 grams
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 small, diced
  • Green bell pepper - 1 small, diced
  • Sesame oil - 1 tablespoon
  • Soy sauce - 1 tablespoon (ensure it's halal)
  • Gochujang (Korean chili paste) - 1 tablespoon
  • Cheddar cheese - 100 grams, shredded
  • Green onions - 2, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Preheat your oven to 200°C (400°F).
  2. Peel and slice the potatoes into thin rounds, about 0.5 cm thick.
  3. In a skillet, heat the sesame oil over medium heat. Add the chopped onion and garlic, sautéing until translucent.
  4. Add the diced carrot and green bell pepper to the skillet, cooking for another 4-5 minutes until softened.
  5. Stir in the soy sauce and gochujang, mixing well to combine all the ingredients. Season with salt and black pepper to taste.
  6. In a baking dish, layer half of the potato slices evenly. Spread half of the vegetable mixture over the potatoes, then sprinkle half of the shredded cheese.
  7. Repeat the layering process with the remaining potatoes, vegetable mixture, and cheese.
  8. Cover the baking dish with aluminum foil and bake for 25 minutes.
  9. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
  10. Once done, remove from the oven and let it sit for a few minutes. Garnish with chopped green onions before serving.
