Ingredients

  • Garlic cloves - 100 grams (about 10-12 cloves)
  • Water - 120 ml
  • Rice vinegar - 60 ml
  • Soy sauce - 30 ml
  • Erythritol (or sugar substitute) - 1 tablespoon
  • Salt - 1 teaspoon
  • Red pepper flakes - 1 teaspoon
  • Sesame oil - 1 teaspoon

Steps

  1. Peel the garlic cloves and set them aside.
  2. In a small saucepan, combine water, rice vinegar, soy sauce, erythritol, salt, and red pepper flakes.
  3. Bring the mixture to a simmer over medium heat, stirring until the erythritol and salt are fully dissolved.
  4. Remove the saucepan from heat and let the brine cool to room temperature.
  5. In a clean glass jar, place the peeled garlic cloves and pour the cooled brine over them.
  6. Seal the jar tightly and refrigerate for at least 24 hours before serving to allow the flavors to develop.
