Ingredients

  • Rice vinegar - 60 ml
  • Water - 60 ml
  • Turmeric powder - 1/2 teaspoon
  • Garlic - 1 clove, minced
  • Sesame seeds - 1 teaspoon (for garnish)

Steps

  1. Peel the daikon radish and cut it into thin matchsticks or slices.
  2. In a mixing bowl, sprinkle the salt over the daikon and toss well. Let it sit for about 10 minutes to draw out moisture.
  3. In a separate bowl, combine the sugar substitute, rice vinegar, water, turmeric powder, and minced garlic. Mix well until the sugar substitute is dissolved.
  4. After the daikon has released its moisture, rinse it under cold water and drain thoroughly.
  5. Pour the vinegar mixture over the daikon and toss to coat evenly.
  6. Transfer the pickled daikon into a clean jar or container, ensuring the radish is submerged in the liquid.
  7. Let it marinate in the refrigerator for at least 2 hours before serving, though overnight is recommended for best flavor.
  8. Before serving, sprinkle sesame seeds on top for garnish.
