Steps
- Peel the daikon radish and cut it into thin matchsticks or slices.
- In a mixing bowl, sprinkle the salt over the daikon and toss well. Let it sit for about 10 minutes to draw out moisture.
- In a separate bowl, combine the sugar substitute, rice vinegar, water, turmeric powder, and minced garlic. Mix well until the sugar substitute is dissolved.
- After the daikon has released its moisture, rinse it under cold water and drain thoroughly.
- Pour the vinegar mixture over the daikon and toss to coat evenly.
- Transfer the pickled daikon into a clean jar or container, ensuring the radish is submerged in the liquid.
