  • Eggs - 4 large

  • Soy sauce - 1 tablespoon

  • Vegetable oil - 2 teaspoons for cooking

Steps

  1. In a mixing bowl, crack the eggs and whisk them until well combined.
  2. Add the chopped green onions, grated carrot, diced bell pepper, soy sauce, sesame oil, salt, and black pepper to the eggs. Mix well.
  3. Heat a non-stick skillet over medium heat and add 1 teaspoon of vegetable oil.
  4. Once the oil is hot, pour half of the egg mixture into the skillet, tilting the pan to spread it evenly.
  5. Cook for about 3-4 minutes or until the edges are set and the bottom is lightly golden.
