Steps

  1. Wash the mustard greens thoroughly under running water to remove any dirt or grit.
  2. In a large pot, bring water to a boil and add a pinch of salt.
  3. Blanch the mustard greens in the boiling water for about 2-3 minutes until they are tender but still vibrant green.
  4. Remove the mustard greens and immediately transfer them to an ice bath to stop the cooking process.
