  • Sesame oil - 1 tablespoon
  • Soy sauce - 1 tablespoon
  • Rice vinegar - 1 tablespoon
  • Sugar - 1 teaspoon
  • Green onions - 2 stalks, chopped
  • Sesame seeds - 1 tablespoon, toasted
  • Fresh cilantro - 2 tablespoons, chopped

Steps

  1. Heat the sesame oil in a large skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
  2. Add the sliced shiitake, enoki, and button mushrooms to the skillet. Cook for 5-7 minutes until the mushrooms are tender and have released their moisture.
  3. In a small bowl, whisk together the soy sauce, rice vinegar, and sugar until the sugar is dissolved.
  4. Pour the dressing over the sautéed mushrooms and stir to combine. Cook for an additional 2 minutes, allowing the flavors to meld.
  5. Remove from heat and let the mushroom mixture cool slightly. Then, transfer to a serving bowl.
  6. Top the salad with chopped green onions, toasted sesame seeds, and fresh cilantro. Serve warm or at room temperature.
