- Soy sauce - 1 tablespoon
- Rice vinegar - 1 tablespoon
- Sugar - 1 teaspoon
- Green onions - 2 stalks, chopped
- Sesame seeds - 1 tablespoon, toasted
- Fresh cilantro - 2 tablespoons, chopped
Steps
- Heat the sesame oil in a large skillet over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
- Add the sliced shiitake, enoki, and button mushrooms to the skillet. Cook for 5-7 minutes until the mushrooms are tender and have released their moisture.
- In a small bowl, whisk together the soy sauce, rice vinegar, and sugar until the sugar is dissolved.
- Pour the dressing over the sautéed mushrooms and stir to combine. Cook for an additional 2 minutes, allowing the flavors to meld.
- Remove from heat and let the mushroom mixture cool slightly. Then, transfer to a serving bowl.
- Top the salad with chopped green onions, toasted sesame seeds, and fresh cilantro. Serve warm or at room temperature.
